Mocha Balls-makes 5 1/2 dozen
- 1/2 cup butter
- 1 1/2 cup semisweed chocolate chips
- 3 teaspoons instant coffee
- 2 eggs
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 2 tsp vanilla
- 2 cups flour
- 1/3 cup baking cocoa
- 1/2 tsp baking powder
- Preheat oven to 350 degrees.
- In a small saucepan over low heat, melt butter 1/2 cup chocolate chips, remove from heat and stir until smooth. Stir in coffee. Let cool for 5 minutes.
- Mix sugars, eggs, vanilla, cocoa powder, baking soda in mixer.
- Mix in cooled chocolate coffee mixture.
- Mix in flour until it forms a dough.
- Lastly stir in the remaining one cup of chocolate chips.
- Drop by teaspoonfuls 2 inches apart and bake for 9-11 minutes until tops slightly crack.
